Step-by-Step Instructions
- Preheat your oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a large pot over medium heat. Add diced yellow onion and sauté for about 5 minutes until softened.
- Stir in one can of cream of mushroom soup, 1 cup of milk, and 1 cup of sour cream into the pot and mix well.
- Add 1 cup of shredded cheddar cheese and stir until melted into the mixture.
- Fold in 2 cups of frozen broccoli and 2 cups of frozen mixed vegetables.
- Whisk 2 eggs, then fold into the mixture along with 2 cups of cooked rice.
- Pour the vegetable mixture into a greased casserole dish, and sprinkle 1 cup of shredded cheddar cheese on top.
- Cover the casserole with aluminum foil and bake for 20 minutes.
- While baking, crush 1 cup of Ritz crackers and mix with 2 tablespoons of melted butter.
- After 20 minutes, remove the foil and sprinkle the cracker mixture over the casserole. Bake uncovered for an additional 10 minutes.
- Once bubbly and golden, remove from the oven, cool slightly, and serve.
