Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Melt 2 tablespoons of butter in a large pot over medium heat. Add diced yellow onion and sauté for about 5 minutes until softened.
  3. Stir in one can of cream of mushroom soup, 1 cup of milk, and 1 cup of sour cream into the pot and mix well.
  4. Add 1 cup of shredded cheddar cheese and stir until melted into the mixture.
  5. Fold in 2 cups of frozen broccoli and 2 cups of frozen mixed vegetables.
  6. Whisk 2 eggs, then fold into the mixture along with 2 cups of cooked rice.
  7. Pour the vegetable mixture into a greased casserole dish, and sprinkle 1 cup of shredded cheddar cheese on top.
  8. Cover the casserole with aluminum foil and bake for 20 minutes.
