Preparing the Cheesecake
- Preheat your oven to 325°F (163°C), and prepare a 9-inch springform pan by greasing it with butter or cooking spray.
- In a medium bowl, combine crushed vanilla wafers with melted butter and press into the bottom of the springform pan. Bake for about 10 minutes and allow to cool.
- Beat together softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Fold in mashed bananas and vanilla extract.
- In a chilled bowl, whip the heavy cream until soft peaks form. Fold in banana pudding mix.
- Gently fold the whipped cream mixture into the cream cheese mixture and pour over the cooled crust.
- Bake for 50-55 minutes until set. Cool on a wire rack for about an hour.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Remove from the springform pan, garnish with bananas and vanilla wafers, and serve chilled.
