Ingredients
  

Crust
  • 2 cups crushed vanilla wafers can substitute with graham crackers or shortbread
  • 1/2 cup melted butter coconut oil is a dairy-free alternative
Filling
  • 3 ripe bananas very ripe for the best flavor
  • 24 oz cream cheese 3 packages, softened
  • 1 cup granulated sugar consider using brown sugar for added flavor
  • 3 large eggs let come to room temperature
  • 1 tsp vanilla extract using pure vanilla is best
Topping
  • 1 cup heavy cream can use half-and-half for a lighter version
  • 1/2 cup banana pudding mix instant mix is very convenient
  • sliced bananas for garnish
  • extra vanilla wafers for garnish

Method
 

Preparing the Cheesecake
  1. Preheat your oven to 325°F (163°C), and prepare a 9-inch springform pan by greasing it with butter or cooking spray.
  2. In a medium bowl, combine crushed vanilla wafers with melted butter and press into the bottom of the springform pan. Bake for about 10 minutes and allow to cool.
  3. Beat together softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Fold in mashed bananas and vanilla extract.
  4. In a chilled bowl, whip the heavy cream until soft peaks form. Fold in banana pudding mix.
  5. Gently fold the whipped cream mixture into the cream cheese mixture and pour over the cooled crust.
  6. Bake for 50-55 minutes until set. Cool on a wire rack for about an hour.
  7. Cover and refrigerate for at least 4 hours, preferably overnight.
  8. Remove from the springform pan, garnish with bananas and vanilla wafers, and serve chilled.
