Preparation Steps
- In a large pot, combine equal parts water, salt, brown sugar, and aromatics such as garlic and thyme. Heat gently to dissolve, let cool completely, then brine the chicken overnight.
- Preheat your oven to 400°F and prepare your baking dish with olive oil. Mix softened butter, olive oil, smoked paprika, black pepper, garlic powder, and thyme into a seasoned butter.
- Remove the chicken from the brine, pat dry, loosen the skin and spread the seasoned butter underneath. Stuff the cavity with garlic, onions, and lemon.
- Place the chicken in the baking dish, add chicken stock around it, and roast for about 1 hour and 30 minutes, basting every 30 minutes.
- While the chicken is roasting, prepare the glaze by combining maple syrup, cranberries, and cranberry juice in a saucepan. Simmer until cranberries burst.
- Once the chicken is done, let it rest for 15 minutes, then brush with the reserved glaze before carving and serving.
