For the Chicken
  • 1 whole Organic Whole Chicken (5-10 lbs) Substitute turkey for larger gatherings
  • 1/2 cup Salted Butter You can use unsalted butter if preferred
  • 1/4 cup Extra Virgin Olive Oil Provides moisture and flavor; substitute with another oil if needed
  • 4 cloves Garlic Cloves Adjust quantity based on your taste preference
  • 2 large Onions Any onion variety works well
  • 2 whole Lemons Can be replaced with limes
For the Seasoning
  • 1 tbsp Smoked Paprika Regular paprika can be used in its place
  • 1 tbsp Dried Thyme Fresh thyme can replace it for stronger flavor
  • 1 tsp Black Pepper Essential for seasoning
  • 1 tbsp Garlic Powder Fresh garlic can also be used
  • 1 tbsp Sea Salt Basic seasoning for balancing flavors
For the Glaze
  • 1 cup Pure Maple Syrup Agave syrup or honey can be used
  • 2 cups Whole Cranberries Either fresh or frozen works well
  • 1 cup Organic Cranberry Juice Pomegranate juice is a solid alternative
  • 1/2 tsp Red Pepper Flakes Omit if a milder flavor is preferred
For the Roasting Liquid
  • 2 cups Organic Chicken Stock Can substitute with vegetable stock

Method
 

Preparation Steps
  1. In a large pot, combine equal parts water, salt, brown sugar, and aromatics such as garlic and thyme. Heat gently to dissolve, let cool completely, then brine the chicken overnight.
  2. Preheat your oven to 400°F and prepare your baking dish with olive oil. Mix softened butter, olive oil, smoked paprika, black pepper, garlic powder, and thyme into a seasoned butter.
  3. Remove the chicken from the brine, pat dry, loosen the skin and spread the seasoned butter underneath. Stuff the cavity with garlic, onions, and lemon.
  4. Place the chicken in the baking dish, add chicken stock around it, and roast for about 1 hour and 30 minutes, basting every 30 minutes.
  5. While the chicken is roasting, prepare the glaze by combining maple syrup, cranberries, and cranberry juice in a saucepan. Simmer until cranberries burst.
  6. Once the chicken is done, let it rest for 15 minutes, then brush with the reserved glaze before carving and serving.
