  • 2 stalks celery chopped
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 pound chicken breasts boneless, skinless, cut into small pieces
  • 10 tablespoons butter divided
  • 1 teaspoon salt
  • 1 tablespoon poultry seasoning
  • 0.25 cup flour
  • 2 cups milk
  • 4 cups cubed bread sturdy, dry, or day-old
For the Optional Topping
  • 4 cups bread cubes toss with melted butter

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large baking dish, combine the chopped onion, diced carrots, chopped celery, wild rice, and chicken broth. Cover with foil and bake for 1 hour and 15 minutes.
  3. Melt 4 tablespoons of butter in a saucepan over medium heat. Whisk in flour, salt, and poultry seasoning, then gradually add the milk until smooth and thickened.
  4. If using, melt the remaining 6 tablespoons of butter and toss the cubed bread to coat.
  5. After the rice is cooked, stir in the chicken pieces and creamy sauce until well combined. Sprinkle buttered bread cubes on top.
  6. Increase the oven temperature to 450°F (232°C). Bake uncovered for 20-30 minutes until the chicken is cooked and the bread cubes are golden brown.
  7. Let cool slightly before serving, garnish and enjoy.
