  • 2 cups Vegetable Broth Optional for consistency

  • 1/4 cup Cilantro Chopped
  • 1/2 cup Vegan Sour Cream
  • 1/2 cup Shredded Vegan Cheese

Method
 

Step-by-Step Instructions
  1. Start by peeling and dicing two medium sweet potatoes into bite-sized pieces.
  2. Chop one onion and one bell pepper into small pieces, and mince three cloves of garlic.
  3. Rinse and drain one can of black beans.
  4. In a skillet over medium heat, add a splash of olive oil and sauté the onions and bell peppers for about 5 minutes.
  5. Stir in minced garlic and cook for an additional 3 minutes.
  6. Add chili powder, cumin, and cinnamon for 1 minute to toast the spices.
  7. Transfer the sautéed mixture to the slow cooker and add the diced sweet potatoes, black beans, and diced tomatoes.
  8. Cover the crockpot and set on low for 6 to 8 hours or high for 3 to 4 hours.
  9. Once cooking is complete, carefully lift the lid and stir the chili, adjusting seasoning to taste.
  10. Spoon the chili into bowls and garnish with avocado, cilantro, vegan sour cream, or shredded vegan cheese.
