- Preheat your oven to 350°F (175°C).
- Melt 2 tablespoons of unsalted butter in a saucepan. Add 1 chopped onion and sauté until soft, about 5-7 minutes.
- Peel and cube 2 pounds of potatoes into 1-inch pieces. Boil in salted water for 5 minutes, drain well.
- Stir in 2 tablespoons of flour into the sautéed onions and cook for 1-2 minutes. Gradually whisk in 2 cups of milk until sauce thickens, about 3-5 minutes.
- Season sauce with salt, pepper, 1 teaspoon of ground mustard, and 1 teaspoon of garlic powder.
- In a large bowl, combine drained potatoes, 2 cups of ham, and 1 ½ cups of cheese. Pour sauce over and mix well.
- Transfer mixture to a greased baking dish and sprinkle with ½ cup of cheese on top.
- Bake in the preheated oven for about 45 minutes until golden brown and bubbly.
- Allow to rest for 10-15 minutes before serving.
