Step-By-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Melt 2 tablespoons of unsalted butter in a saucepan. Add 1 chopped onion and sauté until soft, about 5-7 minutes.
  3. Peel and cube 2 pounds of potatoes into 1-inch pieces. Boil in salted water for 5 minutes, drain well.
  4. Stir in 2 tablespoons of flour into the sautéed onions and cook for 1-2 minutes. Gradually whisk in 2 cups of milk until sauce thickens, about 3-5 minutes.
  5. Season sauce with salt, pepper, 1 teaspoon of ground mustard, and 1 teaspoon of garlic powder.
  6. In a large bowl, combine drained potatoes, 2 cups of ham, and 1 ½ cups of cheese. Pour sauce over and mix well.
  7. Transfer mixture to a greased baking dish and sprinkle with ½ cup of cheese on top.
