  • 3 cloves Minced Garlic Always a great addition!
  • 2 tablespoons Lime Juice Fresh juice is preferable.
  • 1 tablespoon Honey Maple syrup can be used as an alternative.

Cooking Steps
  1. Preheat the oven to 400°F (200°C). Gather all ingredients.
  2. In a mixing bowl, combine coconut milk, olive oil, curry powder, turmeric, ginger, chili powder, garlic, lime juice, salt, pepper, and honey. Whisk until blended.
  3. Season fresh cod fillets with salt and pepper on both sides and place in a baking dish in a single layer.
  4. Pour the coconut curry sauce over the cod, ensuring it's well-coated.
  5. Bake for about 25 minutes, or until the cod is opaque and flakes easily with a fork.
  6. Garnish with fresh cilantro or parsley and serve with lime wedges and side dishes like jasmine rice or roasted vegetables.
