Ingredients

For the Cookie Dough
  • 100 g Butter room temperature; margarine can be used for a dairy-free option
  • 90 g Sugar white; consider brown sugar for a deeper flavor
  • 175 g Flour all-purpose; can swap with whole wheat flour for nuttier taste
  • 2 tsp Vanilla Powder or Vanilla Extract; almond extract is a great substitute
  • 0.5 tsp Baking Powder ensure it's fresh for optimal results
  • 3 tbsp Honey or 2 tbsp of Golden Syrup; maple syrup can also work

Equipment

  • Mixing Bowl
  • electric mixer
  • Baking tray
  • Parchment Paper
  • spatula

Method

Step-by-Step Instructions
  1. Preheat your oven to 180°C (356°F). Gather all ingredients and line a baking tray with parchment paper.
  2. In a medium mixing bowl, cream together the softened butter and white sugar for about 2-3 minutes until smooth and fluffy.
  3. Sift in the all-purpose flour, baking powder, and vanilla powder. Add honey or golden syrup and mix until just combined.
  4. Divide the dough into three equal portions and roll each into logs about 2-3 inches thick. Place on the baking tray.
  5. Flatten each log slightly to about half an inch thick to develop a crispy edge.
  6. Bake in the oven for 12-14 minutes, watching for golden edges and a soft center.
  7. Remove from the oven, let sit for a minute, and then slice diagonally into cookies while still warm.
