Step-by-Step Instructions
  1. Preheat the oven to 425°F (220°C) and bake tater tots for 20-25 minutes until golden brown.
  2. In a skillet, brown the meat with salt and pepper for 7-10 minutes. Drain excess grease.
  3. In a bowl, combine the meat, tater tots, cheddar, and Monterey Jack cheeses, folding gently.
  4. Warm the tortillas in a skillet for 15 seconds on each side until soft.
  5. Place a portion of filling in each tortilla, drizzle chipotle sauce and add sour cream.
  6. Roll the tortillas tightly and place seam-side down in a greased baking dish.
  7. Bake for 15-20 minutes until cheese is melted and bubbling.
