Step-by-Step Instructions
  1. Dissolve yeast by combining warm water, sugar, and yeast in a bowl; let it sit for 5 minutes.
  2. Whisk together all-purpose flour and kosher salt in a mixing bowl.
  3. Gradually add flour mixture to the yeast and stir until a shaggy dough forms.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  5. Let the dough rise in an oiled bowl covered with a towel for 30 minutes.
  6. Preheat oven to 425°F (220°C) and prepare a baking sheet.
  7. Boil 10 cups of water and carefully add baking soda.
  8. Divide dough into 12 pieces, roll into ropes, and shape into pretzels.
  9. Boil each pretzel for 30 seconds and drain.
  10. Stuff each pretzel with cheese.
  11. Brush with egg wash and sprinkle with sea salt.
  12. Bake in the oven for 15-20 minutes until golden brown.
  13. Cool on a wire rack before serving.
