Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Clean the portobello mushrooms with a damp paper towel and remove gills.
  3. In a skillet, heat olive oil and sauté chopped ripe tomatoes for 3-5 minutes.
  4. Mix sautéed tomatoes with fresh mozzarella and chopped basil; season the mixture.
  5. Stuff each mushroom cap with the filling mixture and pack slightly.
  6. Drizzle olive oil and sprinkle salt and pepper on top of the stuffed mushrooms.
  7. Bake the mushrooms on a parchment-lined baking sheet for about 20 minutes.
  8. Drizzle balsamic glaze over the baked mushrooms before serving.
