Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C). Line a muffin tin with paper liners and lightly spray them with nonstick spray.
  2. Prepare your brownie batter and fill each muffin liner with approximately 1 tablespoon of batter. Bake for 8 to 10 minutes until just set.
  3. Beat softened cream cheese until smooth. Add sugar, egg, vanilla, and heavy cream, and mix until silky.
  4. Pour the cheesecake mixture over the brownie bases and tap the pan gently to release air bubbles.
  5. Bake for 15 to 18 minutes until set around the edges but jiggly in the center.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to chill for at least 2 hours.
  7. Heat heavy cream for ganache, pour it over chocolate chips, let sit, then stir until smooth.
  8. Spoon ganache over each cheesecake and sprinkle with mini chocolate chips.
