- In a mixing bowl, combine old-fashioned rolled oats, almond/coconut/cashew milk, and coconut yogurt. Stir in chia seeds and your chosen sweetener until well blended.
- Gently fold in fresh blueberries, lemon zest, lemon juice, and vanilla extract until evenly distributed.
- Cover and refrigerate for at least 4 hours or overnight to allow oats to absorb flavors.
- In the morning, stir the oats. If too thick, add a splash of milk. Serve in bowls or jars, topping with extra blueberries and granola if desired.
