Preparation Steps
  1. In a mixing bowl, combine old-fashioned rolled oats, almond/coconut/cashew milk, and coconut yogurt. Stir in chia seeds and your chosen sweetener until well blended.
  2. Gently fold in fresh blueberries, lemon zest, lemon juice, and vanilla extract until evenly distributed.
  3. Cover and refrigerate for at least 4 hours or overnight to allow oats to absorb flavors.
  4. In the morning, stir the oats. If too thick, add a splash of milk. Serve in bowls or jars, topping with extra blueberries and granola if desired.
