Method

Step-by-Step Instructions
  1. Start by grinding the freeze-dried blueberries into a fine powder using a blender or spice grinder. Set aside the blueberry powder once done.
  2. In a large mixing bowl, combine the rolled oats, vanilla protein powder, blueberry powder, and optional chia or flax seeds.
  3. In a separate bowl, whisk together the unsweetened applesauce, softened cream cheese, and your choice of honey or maple syrup until smooth.
  4. Gradually add the wet mixture into the bowl containing the dry ingredients, stirring continuously until combined.
  5. Gently fold in the thawed frozen blueberries into the combined mixture, being careful not to crush them.
  6. Check the consistency and gradually add milk, a tablespoon at a time, until it is easily rollable.
  7. Take small amounts of the mixture and roll them into 1-inch balls, placing them on a tray lined with parchment paper.
  8. In a small bowl, whisk together more cream cheese, milk, vanilla extract, and powdered sugar until smooth.
  9. Refrigerate the rolled bites for at least 30 minutes to firm up.
  10. After chilling, drizzle the cream cheese glaze on top and garnish with fresh blueberries.
  11. Once decorated, your Blueberry Cheesecake Protein Bites are ready to serve!
