Cooking Steps
- In a bowl, whisk together honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and pepper until mixed well. Add your chicken and coat it thoroughly in the marinade. Cover the bowl and allow the chicken to marinate for at least 30 minutes or up to 8 hours.
- While the chicken is marinating, peel and cube the sweet potatoes into uniform pieces. Toss the cubes in olive oil, salt, and pepper until evenly coated, then spread on a baking sheet.
- Preheat your oven to 400°F (200°C). Roast the sweet potatoes for about 15 minutes until starting to become tender.
- Push the sweet potatoes to one side of the baking sheet, add the marinated chicken to the other side, and arrange green beans around.
- Pour any remaining marinade from the chicken bowl over the chicken and veggies on the baking sheet.
- Return to the oven and bake for an additional 20-25 minutes until the chicken is cooked through and the veggies are tender.
- Plate the Honey Garlic Chicken alongside sweet potatoes and green beans, drizzling pan juices over the top for added flavor.
