Preparation Steps
  1. Cut chicken breasts into bite-sized pieces and season with salt and pepper. Preheat skillet over medium heat and add cooking oil. Cook chicken for 5-7 minutes until golden brown and no longer pink.
  2. Remove chicken and add broccoli, red bell pepper, and carrot to the same skillet. Sauté for 3-5 minutes until tender yet crisp.
  3. In a small bowl, combine mayonnaise, sweet chili sauce, Sriracha, and soy sauce. Whisk until smooth.
  4. Return chicken to skillet, pour sauce over the mixture, and stir until well-coated. Simmer for 1-2 minutes.
  5. Serve by adding rice to bowls, topping with chicken and vegetables, and garnishing with green onions and sesame seeds.
