Step-by-Step Instructions for Baked Feta Eggs
  1. Preheat your oven to 400°F (200°C).
  2. In ramekins, evenly divide cherry tomatoes, diced red bell pepper, and diced red onion. Add minced garlic and feta cheese, drizzle with olive oil.
  3. Mix together dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes. Sprinkle over the feta and veggies.
  4. Place ramekins on a baking sheet and bake for about 25 minutes until vegetables are tender and feta is slightly golden.
  5. Remove from oven, stir feta and veggies together. Add chopped spinach and create wells for eggs.
  6. Crack a large egg into each well. Return to oven and bake for an additional 10 minutes until egg whites are set.
  7. Remove from oven and garnish with chopped herbs or chives. Serve immediately with crusty bread or pita.
