  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
For the Sauce
  • 2 tablespoons Olive Oil for sautéing
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 can Coconut Milk about 400 ml
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Lemon Zest fresh

Cooking Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Sprinkle salt and pepper over the cod fillets, ensuring they're well-coated.
  3. Heat olive oil in a medium skillet over medium heat, then add chopped onions and sauté until translucent, about 3-4 minutes.
  4. Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
  5. Pour in coconut milk, lemon juice, and lemon zest. Stir gently and let it simmer for about 3-5 minutes.
  6. Place cod fillets in a baking dish in a single layer and pour the coconut lemon sauce over the top.
  7. Bake for 20-25 minutes until the cod flakes easily with a fork and appears opaque.
  8. Let the cod rest for a few minutes before serving, drizzling any extra sauce over the top.
