Step-by-Step Instructions
  1. Prepare the Roast by placing the chuck roast in a slow cooker or a large oven-safe pot at room temperature.
  2. Mix the Marinade by combining soy sauce, hoisin sauce, honey, rice vinegar, brown sugar, minced garlic, minced ginger, sesame oil, and optional chili flakes until smooth.
  3. Marinate the Roast by pouring the marinade over the chuck roast and ensuring complete coverage. Let it marinate for at least 30 minutes or up to overnight.
  4. Cook the Roast for 6-8 hours on low in a slow cooker or 3-4 hours in the oven at 325°F until tender.
  5. Rest the Roast for 15-20 minutes after cooking, covered with foil.
  6. Make the Glaze by simmering the remaining cooking liquid until it thickens slightly.
  7. Thicken the Sauce by stirring in a cornstarch slurry into the simmering sauce until glossy.
