  • 3 cloves Garlic minced, fresh cloves recommended
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Coriander
  • 1 teaspoon Paprika smoked for additional flavor, optional
  • 1 pinch Cayenne Pepper adjust to taste
  • 1 teaspoon Garam Masala do not skip
  • 2 tablespoons Tomato Paste
  • 1 cup Tomato Sauce ensure it's plain
  • ½ cup Heavy Cream do not add too early
  • 1 cup Water adjust for consistency

Method
 

Step‑by‑Step Instructions
  1. Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add one finely chopped onion and one diced bell pepper. Sauté for 5-7 minutes until golden brown.
  3. Stir in 2 tablespoons of minced ginger and 3 cloves of minced garlic, followed by 1 teaspoon each of cumin, turmeric, coriander, paprika, a pinch of cayenne pepper, and 1 teaspoon of garam masala. Cook for about 30 seconds.
  4. Incorporate 2 tablespoons of tomato paste and 1 cup of tomato sauce. Mix well and add 1 cup of water; bring to a gentle boil.
  5. Once boiling, reduce heat to low and let it simmer uncovered for 10-20 minutes, stirring occasionally.
  6. Finally, stir in ½ cup of heavy cream and simmer for an additional 5 minutes on low heat without boiling.
